Spaghetti Frittata, the ingredients for 4 people
250 grams of spaghetti
5 organic eggs
4 tablespoons of bechamel
100 grams of leerdammer
50 grams of grated Parmesan Regiano
A handful of pine nuts
A handful of raisins
A handful of peeled almonds
Olive oil

  1. Put the spaghetti to boil in plenty of salted water
  2. When cooked, pass the spaghetti in cold water to stop cooking and drain: make sure that the cooking is al dente
  3. Then pour the spaghetti into a salad bowl
  4. In the meantime, beat the eggs, add some pepper and grated cheese and mix well
  5. Mix the bechamel, pine nuts, raisins and almonds in the mini pinner
  6. Then pour the mixture into a bowl and set aside
  7. Dice the cheese and pour it into the spaghetti
  8. Then add the beaten eggs and the cream previously set aside to the spaghetti
  9. Mix the dough until the ingredients are well combined with the spaghetti
  10. Pour some oil into a non-stick pan and after a few seconds add a portion of the dough
  11. With the help of a spoon, compact the spaghetti on the pan and let it cook for a few minutes
  12. With the help of a lid, turn the Spaghetti Frittata and let it cook for a few minutes
  13. As soon as the omelette takes on a golden color and a crunchy crust, turn off the heat and place it on absorbent paper
  14. Serve warm or cold

Variant: the Spaghetti Frittata it can also be baked in the oven at 180 degrees for 30 minutes: just grease the pan and pour the mixture into it, sprinkling with grated Parmesan cheese on top.
