If you want to prepare a fast and tasty second course, I would like to suggest the courgette rolls. The zucchini they are very versatile vegetables in the kitchen, there are many recipes. What makes a dish tasty is the quality of the product. Therefore it is good to know the origin of the products we buy. Vegetables from organic farming are preferred as they guarantee us a product grown without the use of chemical fertilizers. Do you have a vegetable garden or a terrace? It could be a conscious choice to grow some vegetables such as tomatoes, courgettes, aubergines ... Maybe we know what we eat! And since I have suggested the courgette rolls, here is the recipe to prepare them.
Zucchini rolls, the ingredients for 4 people
7 organic courgettes
1 bell pepper
200 grams of cottage cheese
1 package of bechamel
a handful of raisins
a handful of pine nuts
a glass of white wine
olive oil
50 grams of robiola
a handful of almonds
a few basil leaves
salt
Zucchini rolls, the preparation
- Wash the courgettes well, then 5 cut them into long slices and the other 2 courgettes cut into small pieces
- Grill the courgettes cut lengthwise in the oven or on the grill, cooking them on both sides
- Peel the pepper and cut it into small pieces
- Pour the peppers into a pan with a drizzle of oil and a little water
- After 10 minutes add the courgettes cut into small pieces with the peppers, season with salt and pour in the small glass of wine
- Leave on the fire for about 6 minutes and turn every now and then
- As soon as the wine has evaporated, remove from heat and pour the contents into a bowl
- Pour the ricotta, 4 tablespoons of bechamel, the raisins, the pine nuts into the bowl and mix well until everything is combined
- Take the grilled zucchini, pour the mixture over then roll up the zucchini, stopping them with a toothpick
- Place them on a greased baking sheet and bake in a preheated oven for 15 minutes at 165 degrees
- Remove from the oven, remove the toothpicks and place the zucchini rolls on a serving plate garnished with a few basil leaves
- Garnish each roll with a robiola nut with an almond on top
