Summer is almost upon us and it is the ideal time to fill our tables with lots of good and fresh vegetables. Vegetables are very versatile in the kitchen, they can be used as a side dish for second courses as a condiment for first courses. They can be the ingredients for an excellent pizza. Here is a tasty recipe for a pizza made with zucchini and asparagus. Zucchini are one of the ideal vegetables for summer consumption thanks to their low calorie content, good digestibility and richness in mineral salts.

Garden pizza, the ingredients

  • 500 g of "00" flour
  • 25 g of brewer's yeast
  • 500 grams of zucchini
  • 250 grams of asparagus
  • 400 grams of cottage cheese
  • 1 package of bechamel
  • 200 grams of Parmesan
  • A pinch of salt and pepper

Garden pizza, preparation of the dough

  1. Dissolve the yeast in a bowl with a little warm water and let it rest for 1 hour
  2. Pour the flour onto a pastry board and sift it
  3. Put the yeast in the center, add salt and gradually add 2 tablespoons of extra virgin olive oil and warm water
  4. Knead until you get a soft and fluffy dough
  5. Form a ball, lightly flour it and cover it with a cloth
  6. Let rise for 30 minutes.

Garden pizza, preparation of the filling

  1. Roll out the dough on a greased baking sheet and let the pizza rise under cover
  2. Meanwhile, cut the courgettes into thin sticks and sauté them in a little oil with the garlic and salt until golden brown
  3. Separately, also brown the asparagus cut into chunks
  4. Pour the ricotta, courgettes, asparagus, bechamel, a little pepper into a bowl and mix well with a wooden spoon
  5. Brush the dough with oil and bake for 10 minutes in a preheated oven at 190 °
  6. Remove from the oven quickly, distribute the mixture evenly on the surface: the filling on top must be abundant, more than one centimeter in height of filling
  7. Return to the oven and finish cooking for another 10 minutes
  8. Remove from the oven and sprinkle with the parmesan flakes
